Extra Special Banana Cake

We're bananas for bananas!  Cake, cookies, bread, pie, pudding- you name it we like it!  Topped with your favorite chocolate frosting, this cake is sure to please all of your hungry campers!


For this recipe, we lined the 10" Dutch foil just to make camp clean-up easier.  We don't normally do this because if you've got a good season on your pot you shouldn't need too... I just didn't want to even bother wiping it out with a damp cloth.

Banana Cake
10" Dutch Oven
13 coals on top, 7 on bottom

1 1/2 cups flour
1 cup white sugar
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup mashed bananas (2 large)
1 egg
1/2 cup unsalted butter, melted
1/4 cup milk
1 teaspoon vanilla
1/2 cup butterscotch chips
Chocolate Frosting (either your favorite recipe or store bought)

Line the inside of your Dutch oven with foil.  This will make it easy to clean up.  More importantly, however, it makes it easy to lift the cake out of the pan.  Mix flour, sugar, baking powder and salt.  Add bananas and wet ingredients.  Pour into prepared DO.  Sprinkle with butterscotch chips.  Bake for 30-40 minutes, turning the lid one quarter turn clockwise every ten minutes and doing the same, only counterclockwise, with the base.

When it is cooked lift cake out of the pan using the edges of the foil.  Cool a little.  Top with chocolate frosting- Excellent served warm.
