Chicken and Biscuits- Campsite Comfort Food

Well, we've camped for the last time this season.  The weather here in Iowa has been fantastic for the past four weeks. Sunny, warm days, cool nights, and basically no rain for a month. So, for our last camping trip we made some just regular comfort food. Now, if we were doing this at home, I’d probably go to the effort of making my own biscuits, but at the campground, the kind in the can are just too easy to pass up. Enjoy!


Chicken and Biscuits
10” Dutch Oven
14 coals on top, 8 on bottom

1 can condensed cream of chicken soup
1 cup sour cream
¼ teaspoon dried, crushed sage
¼ teaspoon dried, crushed thyme
½ teaspoon rosemary leaf
½ teaspoon salt
½ teaspoon pepper
2 chicken breasts, pre-cooked and diced
1 16-ounce package frozen peas and carrots, thawed
1 can refrigerated biscuits (10 count)

In the D.O. combine the soup, sour cream, and seasonings. Add the chicken and vegetables. Stir to combine and with the back of the spatula; spread the mixture evenly in the bottom of the D.O. Top with the biscuits (they can be touching). Bake with number of coals as listed above for 30 minutes, rotating the bottom clockwise and the lid counter-clockwise. After 30 minutes, take all of the coals from the bottom and place on top and cook another 5-10 minutes to brown the tops of the biscuits up. Good, tasty, comfort food at the campsite.

Only thing I might do different is crush the rosemary leaf with a mortar and pestle as Matt found the rosemary leaf pieces a bit off-putting.
