Corn Casserole

Simple.  That is our motto for camping recipes.  Corn is a great side dish for just about anything, and being the true Iowans that we are, both of us love any corn dish.

This recipe is seen in just about every church cookbook ever printed.  Its so easy, its no wonder it usually shows up on the table at just about every holiday meal.


Corn Casserole
10" Dutch oven (or 12" for a thinner casserole)
14 coals on top, 8 on bottom (more for 12")


1 cup sour cream
1/2 cup butter or margarine, melted
1 14.75 ounce can whole kernel corn
1 14.75 ounce can cream style corn, drained
1 egg, beaten
1 8 ounce package corn muffin mix

Butter the inside of your D.O.  Combine all ingredients.  Spread into prepared D.O.



Bake for 35-40 minutes.  If using a 12" D.O. the time will be shorter.
